Caramel Apple Weight Watchers Points

Candy and Caramel Apples

It doesn't get more festive fall food than dipped apples. Which is why we created two versions of everyone's favorite Halloween party treat: red-hot candy-coated apples and super-easy caramel ones. Even better, you can mix and match toppings for a truly personalized treat. Recruit the kids to make their own combos. (Just save the apple dipping for the adults. The melted coatings can be very hot.)

Homemade Candy Apples
• 8 (4-inch) ice cream bar sticks
• 8 small Red Delicious apples, washed and dried
• 1 cup water
• 3 cups sugar
• 1/2 cup light corn syrup
• 1/4 cup Red-Hots candies
• 1/2 teaspoon red food coloring
• 3/4 cup colorful sprinkles

1. Insert a wooden stick part way through stem end of apples. Grease large cookie sheet; set aside.
2. In 2-quart saucepan, combine remaining ingredients. Over medium heat, heat mixture to boiling, without stirring.
3. Boil, without stirring, until candy thermometer reads 290 degrees F., or when a little of mixture dropped into cold water separates into thin hard threads, about 20 minutes.
4. With brush dipped in hot water, occasionally brush sugar from side of pan as mixture cooks.
5. When cooked, remove syrup from heat. Tip saucepan; swirl each apple in mixture to coat.
6. Lift apple out of syrup mixture and swirl it over the saucepan a few more seconds to allow any drips to fall back into saucepan. Work quickly before syrup hardens. To soften, place saucepan over very low heat.
7. Place apples on cookie sheet to cool slightly. Then, roll apples in bowl full sprinkles.
8. Cool at least 1 hour before serving.

So-Easy Caramel Apples
• 8 (4-inch) ice cream bar sticks
• 8 medium (about 1 3/4 pounds) Macintosh or Macoun apples
• 3/4 cup(s) chopped peanuts (or miniature candy-coated chocolate pieces, semisweet-chocolate pieces, flaked coconut, colored sprinkles, toffee bits, or other favorite topping)
• 1 package (14-ounce) chewy caramels
• 3 (1-ounce) squares semisweet or white chocolate, melted

1. Insert an ice-cream-bar stick in stem end of each apple. Place peanuts or other topping on sheet of waxed paper.
2. Line 15 1/2-inch by 10 1/2-inch jelly-roll pan with waxed paper; spray waxed paper with nonstick cooking spray.
3. In 2-quart saucepan over low heat, heat caramel candies and 2 tablespoons water, stirring constantly, until melted and smooth; remove saucepan from heat. 4. Holding stick, dip 1 apple into caramel mixture, spooning mixture over apple to coat completely. (If caramel mixture in saucepan begins to harden, warm over low heat to soften.)
5. Roll caramel-coated apple in bowl of peanuts or other topping to coat bottom; place apple in jelly-roll pan.
6. Repeat with remaining apples, caramel, and topping. Set aside to cool before eating.
